Iron Chef to debut sixth Philly venture: Garces Trading Company

On Tuesday, Feb. 16, Chef Jose Garces will debut his sixth Philadelphia venture, Garces Trading Company (1111 Locust St., 215-574-1099), a gourmet market and cafe. Open Monday through Friday from 7 a.m. until 10 p.m. and Saturday and Sunday from 8 a.m. until 10 p.m., the multi-purpose space will feature a host of house-made and imported foods under the Garces Trading Company label, as well as Chef Garces’ award-winning cuisine, available for eat-in or take-out. Other features include a flower shop, an on-site bakery, private label olive oils and vinegars, Chef Garces’ signature coffee and the Pennsylvania Liquor Control Board’s first wine boutique.

“I want Garces Trading Company to be a first for Philadelphia: perfect for a quick bite or a casual meal at any time of day, from breakfast until night,” says Chef Garces who was recently named one of Food Network’s Iron Chefs and owns Amada, Tinto, Distrito, Chifa and Village Whiskey restaurants.

Set in a bright market atmosphere with high ceilings, wooden tables and white subway tiled walls, Garces Trading Company will have abundant food displays such as hanging meats, fresh baked breads and tarts. Different sections will include: a cheese shop with free samples and Chef Garces’ signature Cheese Complements from Amada, including garlic dulce de leche and fig and cherry marmalade; a variety of imported single estate Vinegars and Olive Oils from Spain, Italy and Greece; Chef Garces’ signature line of coffee, carried and served in each of his restaurants (and the chef’s personal favorite); and “GTC at Home,” which offer people a chance to enjoy Chef Garces’ food in neatly packaged bags for convenient reheating. Other prepared foods and imported products will include: French, Spanish and Italian Cheeses; house-cured and imported Charcuterie; and hand-crafted Sandwiches served on house-baked bread.

During lunch and dinner, Garces Trading Company visitors will be treated to a menu of European fare, including: a variety of pastas such as Pappardelle with lamb ragu, sun choke puree and piavecchio and Tuscan Fusilli alla Carbonara with guanciale, eggs, black pepper and pecorino; thin crust and deep dish pizzas (Chef Garces hails from Chicago); and daily changing plats du jour such as Coq au Vin, with pearl onions, mushrooms and potatoes on Mondays and Bouillabaisse with gambas, halibut, mussels, cockles and saffron ruille on Thursdays. Guests who prefer to enjoy their food at their home or office can order it to go and quickly be on their way.

“Our menu reflects my Spanish cooking heritage and also includes other European cuisines, including some French and Italian dishes,” says Chef Garces. “Most of the items on the menu were chosen because they are familiar, and they’re the sorts of foods that I crave from my travels when you stumble upon a sweet little no-name cafe with great food.”

Of special note is Garces Trading Company’s pioneering venture with the PLCB; the state will lease a percentage of the restaurant’s space from Chef Garces and use it to sell a selection of over 200 red, white and sparkling wines and fine spirits. A strong focus on the wines of Spain, France and Italy will complement the menu.

Another important aspect of Garces Trading Company is the coffee of the same name that Chef Garces has custom-roasted to his specifications and serves in his restaurants. That coffee will be available for purchase, either packaged for guests to take home from the market or brewed by an expert barista into drip coffee and a variety of espresso drinks.

“One of the best things about visiting a cafe in Europe is indulging in a cappuccino or cafe latte while browsing the pastry counter and other wares,” says Chef Garces. “At Garces Trading Company, we want to make sure that our guests get a fantastic cup of coffee every time, so we’re thrilled to be serving our signature grind.”

Garces Trading Company was designed by Chef Garces’ longtime collaborator, Jun Aizaki, of New York-based Crème Design Collective. The restaurant and market will seat 75 diners at high-top, butcher block tables, while guests browse the wares surrounding the central dining area. A florist stall, wine shop, coffee counter, bakery and cheese and charcuterie seller will ring the u-shaped space much like an outdoor market in Europe, framing the tables with displays of their wares that include hanging cured meats and cheeses, sprays of blossoms and cases of wine.

“Garces Trading Company recalls the era of merchant ships and open-air markets,” says Aizaki, who is also responsible for all of Chef Garces’ spaces, including Amada and Distrito. “We’ve broken the edges of the main space into a series of stalls selling their wares, and guests can browse, shop, then settle in at a table in the central dining area and enjoy their purchases at their own pace.”

Garces Trading Company will be open Monday through Friday from 7 a.m. until 10 p.m., and Saturday and Sunday from 8 a.m. until 10 p.m. The full service cafe will be open from 11 a.m. to 10 p.m. daily. The Wine Shop will be open from 10 a.m. to 10 p.m. Monday through Saturday, and from 12 noon to 5 p.m. Sunday.
